LCHF coffee

This is "bullet proof" coffee or as I call it magic coffee. It is basically regular coffee with a spoonfull of coconut oil and a spoonful of butter and it serves to increase your fat intake. Most recipes advise a particular coffee but I think that's just a sales thing.. It also is advised to blend the mix up but I find that vigorous whipping with a fork or mixing with a spoon works just fine - hey let's not make an industry of making a cup of coffee! Anyhoo it tastes just fine - slight bitter taste from the coconut - and it really "satisfies" you and fills you up. Bottoms up!

I made oopsie bread

I have no idea why it is called oopsie bread!  But ultimately it is an LCHF bread substitute.

The three ingredients I used were eggs, cream cheese and salt.  You can get full recipe and and loads of other interesting stuff on the diet doctor's page here.

So the below pictures are a summary of my oopsie bread journey.  
I have put a few comments about each pic down below.

1. Splitting yolks and whites is stressful. Phew.
2. Yolks and cream cheese is mixed up.
3. & 4. You end up with a very liquid mixture
5. The egg whites need to be mixed very very stiff!!!
6. And then folded into the yolks trying to avoid getting rid of the air
7.  I need to work on my sizing of the oopsie on to the baking tray :-)
8.  Lovely and golden!
9. Oopsie bread with butter, topped with cheese and prosciutto ham.

New year, new diet

If you have been following me for a while or since last January anyway you will know I am a big fan of the January diet.  Particularly needed this year!!!

Well this year I am trying the Low Carbohydrate, High Fat diet (LCHF).  Or as I prefer to think of it, less of a diet and more of a lifestyle change.

And the good news about this year's diet is that it has science behind it.

"Eat less saturated fat: that has been the take-home message from the U.S. government for the past 30 years. But while Americans have dutifully reduced the percentage of daily calories from saturated fat since 1970, the obesity rate during that time has more than doubled, diabetes has tripled, and heart disease is still the country’s biggest killer. Now a spate of new research, including a meta-analysis of nearly two dozen studies, suggests a reason why: investigators may have picked the wrong culprit. Processed carbohydrates, which many Americans eat today in place of fat, may increase the risk of obesity, diabetes and heart disease more than fat does."  (From Scientific America)

Nuts, seeds, cream (in coffee all day, plus in dinner), chicken, eggs, mayonaise, sparkling water, bacon lardons, parmesan cheese.

It seems CRAZY doesn't it.  
But the research behind this diet says that fats are not to be feared, that it is the sugar that is the poison.
